If you've ever sipped mezcal in Oaxaca, you know the ritual: a small clay cup of mezcal, a slice of orange, and a pinch of Sal de Gusano — agave worm salt. It's not a gimmick. It's centuries of tradition distilled into a single bite.

Sal de Gusano is made from ground chinicuil (red agave worms), toasted chiles, and sea salt. The result is a deeply savory, smoky, umami-rich salt that amplifies the complexity of mezcal like nothing else. When you use it to rim a margarita glass, you're not just adding salt — you're adding an entire flavor dimension.

The Classic Mezcal Margarita with Sal de Gusano Rim

Serves: 1 | Prep time: 5 minutes

Ingredients

  • 2 oz mezcal (reposado or joven)
  • 1 oz fresh lime juice
  • ¾ oz agave nectar (or simple syrup)
  • ½ oz triple sec or Cointreau
  • Ice
  • Gran Mitla Sal de Gusano — for the rim
  • Lime wedge and orange slice, to garnish

Instructions

  1. Rim the glass: Run a lime wedge around the rim of a rocks glass. Spread a generous layer of Sal de Gusano on a small plate and press the rim into it. The salt should coat about ½ inch of the glass.
  2. Build the cocktail: Fill a cocktail shaker with ice. Add mezcal, lime juice, agave nectar, and triple sec.
  3. Shake hard for 15 seconds until well chilled.
  4. Strain over fresh ice into your rimmed glass.
  5. Garnish with a lime wheel and an orange slice. Optionally, add a small pinch of Sal de Gusano directly on top of the drink.

Pro tip: The worm salt rim evolves as you drink — the first sip is boldly savory, and by the end, the salt has melded with the citrus for a completely different experience. Sip slowly.

The Spicy Mezcal Margarita Variation

Want heat? This variation layers Sal de Gusano with a jalapeño-infused mezcal for a cocktail that's smoky, spicy, and deeply complex.

Ingredients

  • 2 oz jalapeño-infused mezcal (steep 2–3 jalapeño slices in mezcal for 30 min)
  • 1 oz fresh lime juice
  • ¾ oz agave nectar
  • 2 thin jalapeño slices
  • Ice
  • Gran Mitla Sal de Gusano — for the rim

Instructions

  1. Rim your glass with Sal de Gusano as above.
  2. Muddle jalapeño slices in the shaker.
  3. Add infused mezcal, lime juice, and agave nectar with ice.
  4. Shake vigorously and double-strain into the rimmed glass over ice.
  5. Garnish with a jalapeño slice and lime wheel.
