Long before mezcal became a global obsession, the Gusano de Maguey — the agave worm — was already a prized delicacy in Oaxaca. Consumed by Aztec emperors and celebrated across generations, this Chinicuil worm lives inside the heart of the maguey agave, absorbing its earthy, smoky essence.

At Gran Mitla, we follow a three-generation-old family recipe: adult worms are carefully hand-pulled from the agave pulp, then slowly toasted and ground together with hand-harvested Oaxacan sea salt and dried Oaxacan chilies. The result is a complex, umami-rich finishing salt unlike anything else.
